Authentic Mexican Salsa

One of the many benefits to having a sister-in-law from Mexico is all the delicious, authentic mexican recipes she shares with me.

One of my favorite, and the absolute easiest, is her homemade salsa.

All you need is:
4- large tomatoes, whole
1- large onion, quartered
2- tablespoons pepper
1/2- tablespoon salt
5-6 - cloves of peeled garlic or 3 tablespoons minced garlic
1-fistful of cilantro
4-5- sliced jalapenos (I use 7 because I like things extra hot, but I recommend starting low and adding as desired)
Enough water to cover ingredients

Put everything in a medium sized pot, cover, and cook on low for about 2 hours. After about 20 minutes, you can usually tell by smell how spicy it will be so this is when you add more jalapenos if desired.

After about 2 hours, remove from heat and let cool for about 15 minutes.

Pour into blender and liquefy.

Voila!! You now have an authentic and delicious Mexican salsa! Easy, right?

Tip: for dipping, I prefer pretzels to chips, but it's good with both. Enjoy!
